While walking across the U.S. with the Steps Across America team, we dined at Houlihan's where they advertise CLASSIC AMERICAN FOOD.  I ordered California Mashers, and much to my surprise, I was served mashed cauliflower!  I loved the dish!  It's low calorie and a light substitute for mashed potatoes. The low fat cheese and garlic give this dish a fantastic flavor!

California Mashers

1 large head of cauliflower
10 squirts of "I Can't Believe it's not Butter" spray
4 tablespoons Maggio brand part skim ricotta cheese
1/2 cup shredded low fat cheddar cheese, divided
salt, pepper, & garlic powder to taste

Preheat oven to 350 degrees.

Wash and segment the cauliflower.  Steam for 25 minutes until VERY tender.
Drain well and pat dry.

Combine cauliflower, butter flavor spray, and ricotta cheese in mixing bowl and blend well.
Taste and add salt, pepper, and garlic powder to taste.  (Start with 1/2 teaspoon salt and 1/8 teaspoon each of pepper and garlic and go from there).

Stir in 1/4 cup low fat cheese.  Pour mixture into baking dish and top with remaining shredded low fat cheese.

Bake uncovered for 25 minutes.  (Can sprinkle with parsley, paprika, or chives).
