SHOPSKA SALAD (A Bulgarian Summertime Staple!)

This cool and refreshing salad can be found on tables throughout the Balkan Peninsula. A QUICK and EASY dish to prepare, it is the perfect accompaniment to any backyard barbecue!
Shopska Salad
Ingredients:
6-8 medium tomatoes
4-6 cucumbers
1 green bell pepper
6 oz. feta cheese
1 tbsp sunflower oil (or other light oil)
salt to taste
Chop the tomatoes into 1/4" cubes. Chop the cucumbers in quarters lengthwise, then into 1/8" slices. Chop the bell pepper into 1/8" bits. Mix the chopped ingredients together into a large bowl. Add salt to taste. Generously grate feta cheese on top. Dress with sunflower oil. Enjoy!
