SWEET 'N' SPICY MEAT LOAF

This hearty meat loaf makes a delicious dinner and your family will love any left-overs! Served cold on thick bread, slices of this meat loaf make a tasty late-night (or anytime) sandwich!
Sweet 'n' Spicy Meat Loaf
1-1/2 to 2 pounds ground beef
1 onion, finely chopped
1 cup dry bread crumbs
1 cup (4 ounces) shredded cheddar cheese
1/2 cup sweet-and-spicy French dressing
2 eggs
1 (4-ounce) can mushrooms, drained
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ketchup
Preheat oven to 375°. Coat a 9" x 5" loaf pan with nonstick cooking spray.
In a large bowl, combine all ingredients except ketchup; mix well. Place mixture in pan; Spread ketchup evenly over top.
Bake 1 to 1 1/4 hours, or until juices run clear. Allow to sit 5 minutes. Pour off excess juices, slice, and serve.
