The crunchy celery and almonds perfectly compliment the soft-and-chewy tofu in this delicious dish. Serve it on a bed of Romaine lettuce or on a bun with lettuce, tomato, and onions.
Vegetarian "Better Than Chicken" Salad
Ingredients:
1 lb. tofu, cut into ½ inch cubes
2 Tbsp. fresh lemon juice
½ tsp. celery salt
1 cup diced celery
1/3 cup minced green onions
½ cup slivered, toasted almonds
½ tsp. salt
1 cup tofu sour cream
• In a bowl, combine the tofu, lemon juice, and celery salt.
• Add the celery, green onions, almonds, and salt.
• Blend together with the tofu sour cream. Chill and serve.
• Makes 4 cups.
