WHIPPED SHORTBREAD COOKIES

Smelling these buttery shortbreads in the oven will make your mouth water! An EASY basic recipe! Daughter-in-law, Janet prepares these for my two precious grandsons.

Whipped Shortbread Cookies

1 cup butter, softened (I like salted butter)
1 1/2 cups all-purpose flour
1/4 cup cornstarch
1/2 cup confectioners sugar
1/2 tsp vanilla

(Great plain or can be garnished with item of your choice.  M & M's are good!)

Directions:
Preheat oven to 350 degrees.
In large bowl, combine butter, flour, and confectioners sugar.
With an electric mixer, beat for 10 minutes, until light and fluffy (until it looks like icing).
Spoon onto cookie sheets covered with parchment paper, spacing cookies 2 inches apart.
Bake for 15 to 17 minutes in the preheated oven, or until the bottoms of the cookies are lightly browned.
Remove from oven and let cool on cookie sheet for 5 minutes.
Store in an airtight container, separating each layer with parchment paper.
